Vanilla Cupcakes

Unlike a huge percentage of cakes, cupcakes use more sugar than they use flour. The internet is awash with recipes but this is the easiest one I’ve managed to come up with. And it works. Even if you are an absolute beginner with no baking experience whatsoever, you can still dazzle with these pretty beauties.
Don’t forget the Manolos.
Makes 12 delicious cupcakes

Preheat the oven to 170C, 325F or Gas Mark 3

You need:
280g caster sugar
80g unsalted butter, at room temperature
2 eggs
½ teaspoon salt
240ml whole milk
½ tsp vanilla extract
240g plain flour
3 tsp baking powder
1 quantity vanilla frosting

Hundreds and thousands or other edible sprinkles, to decorate

A 12-hole muffin tray, lined with cupcake paper cases
Beat the sugar with the butter until you have a fluffy cream.
Add the eggs, salt, milk and vanilla extract.
Add the baking powder to the flour. Mix lightly, then mix both with the above.
Spoon the mix into individual paper cups which you have placed in the muffin pan and bake for around 10-15 minutes until they are risen and golden.
When cool – and not before – decorate with the frosting.
